Arugula, Roquette or Rocket
(Eruca vesicaria sativa)

     

Mustard like salad greens. Lightly cooked like spinach. Adds a spicy, nutty flavor to salad, dark green leaves. A popular herb from times past, now enjoying. Do not confuse this with another herb, called sweet rocket. This herb has been popular in Europe for many years and is now gaining favor here as a gourmet salad ingredient. Arugula has a pungent, almost hot taste. People either love it or hate it. Those who have acquired a taste for it use it regularly.

Arugula is mainly a salad herb and the entire leaf is used. A little goes a long way due to its sharp flavor. Many people use it on sandwiches. It is also an ingredient in sauces for pasta, fish, vegetables and stir fry. It does not make a good garnish because it wilts rather quickly when not kept cool.

Annual 8" to 12" height. Arugula wilts quickly in the heat or sun. If the temperature is warm, pick only small amounts at a time or put the herb into a cooler immediately upon harvesting. Gently wash the leaves, if needed and allow them to dry completely in a cool shaded area before packaging. Wet arugula rots quickly.
